Pesto Princess Basil and Lemon Pesto (Cape Town Only*)
Pesto Princess started in the kitchen of their founder, Kathleen, nearly 22 years ago. Basil Pesto has been their signature product since the beginning, but many of their #LoyalRoyals let them know that they were looking for a non-dairy, vegan-friendly version. As so… Pesto Princess developed their Basil and Lemon Pesto and are we glad they did!
Did you know the Pesto Princess pesto sauces are concentrates? This means they’re made with just enough oil, packed with loads of basil (43% to be precise) and mixed with hugely generous amounts of nuts, garlic and cheese (no cheese for this vegan pesto, of course).
They’re so thick that a spoon can literally stand up in them! This sauce actually needs thinning out before you use it. The good news is you get to choose just how you’d like to do that: either with some boiling water, often snitched from the pasta pot, or with olive oil, or a combination of both. A single 130g jar of Pesto Princess pesto can be diluted to produce 200g of pesto! That’s a score of 70g more pesto. Mahala!
This pesto is delicious on the base of pizza and so good you’d want to eat it straight out of the jar! Add this citrus-flavoured treat to a creamy carrot soup or serve with freshly cooked asparagus, roasted veggies or cauliflower mash. Shelf life, storage and handling tips
Pesto Princess products need to be refrigerated and this pesto has a shelf life of 35 days from date of manufacture, indicated with use by date on the product. If your fridge is not that cold, rather store in the freezer to prolong the shelf life. Spoon pesto into ice cube trays, and once frozen, store in a Stasher Bag, for portioning out as needed. The whole jar can also be stored in the freezer without cracking.
Always use a clean spoon when serving your pesto to avoid contamination. Pesto naturally darkens when it comes into contact with oxygen, so you can cover with a little olive oil each time you use it. Rather than discard the darkened pesto, simply stir it into the rest of the jar, and it won’t be noticeable.
Dilute this pesto with 30 ml boiling water and 30 ml olive oil before adding to your dish.
